Blueberry Bliss Part One: Blueberry Coconut Bites

Hey kids!

It's Tuesday, Tuesday, gotta put up a post for Tuesday! (Rebecca Black ain't got nothin' on me).
 
     I feel like a lot has been going on and life has been hectic and this past weekend was filled with work, work, work. I know I missed a post yesterday and I'm sorry - it felt weird not posting! But I just needed a day to myself. So I slept all day a lot and got tons of errands out of the way including getting a new bike lock, combating fruit flies, buying food for me and buying food for Sir Henry. 

   To win over your forgiveness - I want to share a recipe! I was recently inspired to take part in Ricki's Sweet or Savory Kitchen Challenge. I haven't participated before, so this is a new challenge for me. This month's ingredient...  

blueberries!


Here are the rules as per Diet, Dessert and Dogs:
  • Cook up a recipe–whether yours or someone else’s with credit to them–using the challenge ingredient. Your recipe must be made for this event, within the month of the challenge–sorry, no old posts are accepted.  Then, post the recipe to your blog (if you don’t have a blog, see instructions below).
  • Be sure to mention the event on your post and link to the current SOS page so that everyone can find the collection of recipes. Then, link up the recipe using the linky tool below.
  • As a general rule, please use mostly whole foods ingredients (minimally processed with no artificial flavors, colors, prepackaged sauces, etc.).  For example, whole grains and whole grain flours; no refined white flours or sugar (but either glutenous OR gluten-free flours are fine).
  • Please ensure that recipes are vegan or include a vegan alternative (no animal products such as meat, fish, chicken, milk, yogurt, eggs, honey).
  • Please use natural sweeteners (no white sugar, nothing that requires a laboratory to create–such as splenda, aspartame, xylitol, etc.). Instead, try maple syrup, agave nectar, brown rice syrup, coconut sugar, dates, yacon syrup, Sucanat, stevia, etc.
  • Feel free to use the event logo on your blog to help promote the event
  • Have fun and let your creativity shine!

Phew, now that the rules are out of the way you should:
1) Join the challenge!
2) Make my recipe below!
3) Eat the recipe and say "mmmm" (Or say "blech" and tell me why).

BLUEBERRY COCONUT BITES

1 cup brown rice flour
1/2 cup coconut flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. xantham gum
2 flax eggs
1 tsp cinnamon
1/2 cup coconut oil
1 tsp vanilla
1/2 - 1 cup palm sugar (I used 1 cup because I can't read numbers, but I reccomend 1/2 cup)
1/2 cup agave
1 cup coconut milk
2 - 3 tsp blueberry tea
1 cup blueberries



1. Preheat oven to 350 and prep that cookie sheet
2. Put coconut milk on stove and place blueberry tea in filters and into the milk. (I used Steeped and Infused Canadian Blueberry Tea). Bring to boil and stir frequently.
3. Prep your flax eggs (1 tbsp flax + 3 tbsp warm water = 1 flax egg). Let them sit for 5 minutes.
4. Mix all of your dry ingredients together.
5. Mix all of your wet ingredients together (including your flax eggs) and add the blueberry infused coconut milk.
6. Add the wet ingredients to your dry ingredients. Final step is to add those delish blueberries and stir in until just mixed.
7. Create balls, triangles, squares...whatever you like! Put them on the cookie sheet and bake for about 10-15 minutes (depends on your oven, my friends).



    I brought these into work and they disappeared pretty quickly. So I think they've been guinea pig approved!
